peanut butter & bacon sandwich

You’ll Need:
2 slices bread, toasted
1 tbs (approx) peanut butter, crunchy style preferred
2 slices fried bacon, crisp
Procedures : Toast the bread. Spread the peanut butter on both slices; add the bacon strips. Assemble sandwich in customary fashion and slice diagonally. Garnish with potato chips

chili-cheese cornbread

You’ll Need:
3 eggs, slightly beaten
1 can (16oz) cream style corn
1 can (4oz) chopped green chilies, drained
1/2 cup mayonnaise
1/4 cup diced onion
2 cups shredded Cheddar cheese
2 cups buttermilk
3 cups self-rising cornmeal mix
Procedures : Combine eggs, corn, chilies, mayo, onion, cheese, and buttermilk in a large bowl; stir to blend. Add cornmeal mix; stirring just until moistened. Pour into greased 13x9x2 inch pan. Bake at 375 degrees F. for 40 to 45 minutes or until golden

swiss burger pie

You’ll Need:
1 lb ground beef
2/3 cup quick or old fashioned oats
1/2 cup Thousand Island dressing
1 egg
3/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 can (16oz) sauerkraut, drained
2 cups shredded Swiss cheese
1 1/2 tsp caraway seeds (optional)
Procedures : Preheat oven to 350 degrees F. Combine first seven ingredients; mix well. Press onto bottom and sides of 9 inch pie plate. Bake about 15 minutes; drain. Combine sauerkraut, Swiss cheese, and caraway seeds. Mix well and spoon into partially baked meat pie shell. Bake 12 to 15 minutes or until cheese is melted. When firm, cut into wedges

tomato pie

You’ll Need:
1 9″ pie shell
3-4 tomatoes, wedged or chopped and peeled (I drained a can of chopped
tomatoes, it worked just fine)
1 cup mayonnaise
1 cup shredded Cheddar cheese
1 medium yellow onion, chopped
garlic to taste (about 4 cloves)
basil
Parmesan cheese
Procedures : Mix tomatoes, mayo, cheese, and onion. Pour into browned pie shell; top with basil and Parmesan cheese and bake at 350 degrees F. for at least 35 minute

Swedish pot roast

You’ll Need:
3 lbs beef pot roast, chuck, or brisket
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp ginger
2 tsp salt
1/8 tsp pepper
2 tbs olive oil
2 onions, sliced
1 clove garlic, diced
1/2 cup brown sugar
1/2 cup red wine (or cider vinegar)
1 cup water
4 bay leaves
Procedures : Combine nutmeg, cinnamon, ginger, salt, and pepper; rub into meat. Heat pressure cooker, add olive oil and brown meat well on all sides. Add onion, garlic, brown sugar dissolved in wine, water, and bay leaves. Close cover securely. Place pressure regulator on vent pipe and cook 35 minutes with pressure regulator rocking slowly. Let pressure drop of its own accord

blueberry fritters

You’ll Need:
2 tbs all purpose flour
1 cup fresh blueberries
1 cup all purpose flour
2 1/2 tsp baking powder
1/4 cup sugar
pinch of salt
1 egg, beaten
1/3 cup milk
vegetable oil
powdered sugar
Procedures : Combine 2 tbs flour and blueberries, toss lightly, and set aside. Combine 1 cup flour, baking powder, sugar and salt in mixing bowl; mix well. Combine egg and milk; gradually add milk mixture to flour mixture; stir until smooth. Fold in blueberries. Heat 3 to 4 inches of oil to 375 degrees F. in Dutch oven; drop 3 to 4 scant 1/4 cupfuls of batter at a time. Cook 3 minutes or until golden brown on one side. Turn and cook another 3 minutes. Drain on paper towels. Sprinkle with powdered sugar

You’ll Need:
2 lbs carrots, peeled and sliced 1/4-inch thick (about 6 cups)
1/4 cup cider vinegar
2 tbs olive oil
2 tbs sugar
1/2 tsp prepared mustard
1/2 tsp Worcestershire sauce
1/2 can condensed cream of tomato soup (about 5oz)
1 green pepper, chopped
1 large red onion, chopped
Procedures : Cook carrots in water to cover until almost tender (8 to 10 minutes); do not overcook; drain. Combine next 6 ingredients in large bowl. Add carrots; toss to coat. Add green pepper and chopped onion. Cover and refrigerate 2 hours before serving

valentine’s day recipe

You’ll Need:
2 rib eye (or strip) steaks
2 baked potatoes
2 servings tossed salad
1 bottle wine
1 candle
1 rose
1 Forever Yours candy bar, sliced diagonally into 1/2-inch pieces
1 blanket
1 fire in the fireplace (optional if you don?t have one)
1 Michael Bolton CD (the one with “When A Man Loves A Women”)
Procedures : If you have children, find a relative, friend, or babysitter to take them for the evening. Tell your woman to freshen up while you get ready. Bake the potatoes, broil the steaks, and toss the salad. Spread the blanket on the den floor, light the fire and the candle, pour the wine, and enjoy these things with your woman while sitting on the blanket as if at a picnic. For dessert, serve the Forever Yours (making sure she knows the name of the candy bar dessert) while telling her sweet things. Then give her the rose and ask her to stand. Ask her if she?s ready for her present. When she nods, reach back and hit the button on the CD player. (You did anticipate this and cue up “When a Man Loves a Woman”, right?) When the music starts, take her in your arms and dance with her.

Though the above is particularly effective when times are tight and you maybe can?t afford the expensive dining out, etc., it can be just as meaningful when money is not a problem. Women like the romance of such a thing. They appreciate the thoughtfulness of you going out of the way to create a magic moment for them. They will tell their friends what a wonderful sweetie you are. And you know what? The best part is that you?ll enjoy making her happy. Feel free to vary the ingredients and/or adapt the directions

macaroon valentines

You’ll Need:
4 large egg whites
1 1/2 tsp vanilla
2/3 cups sugar
1/4 cup all-purpose flour
3 1/2 cups lightly packed sweetened flaked coconut
8 oz semi-sweet chocolate, chopped
3 1/2 tbs butter or margarine
Procedures : In a large bowl beat egg whites with a mixer or whisk until frothy. Add vanilla, sugar, and flour; mix until smooth. Stir in coconut until evenly moistened. On 2 well greased 12- x 15-inch baking sheets, evenly space 1/4 cup portions of dough. Pat each into a flat-topped heart shape about 1/2 inch thick and 3 inches long. Bake in a 325? F. oven until macaroons are golden, about 25 minutes. Switch positions of baking sheets halfway through baking. Transfer macaroons to rack and let cool. Place chocolate and butter in a 1 12 to 2-quart pan; set pan over slightly larger pan filled with about 1/2 inch water. Bring water to simmering over medium heat and warm just until chocolate and butter melt; stir occasionally. Remove pans from heat; keep chocolate mixture over hot water. One at a time, dip half of each macaroon in chocolate, tipping top pan and scraping sides to collect chocolate. (Save leftover chocolate for other uses.) Set macaroons slightly apart on waxed paper placed on a 12- x 15-inch baking sheet. Chill, uncovered, until chocolate hardens, about 45 minutes. Serve, or wrap each airtight in plastic wrap, then chill up to one wee

Pineapple-Peach, Ginger Dipping Sauce

You’ll Need:
8 oz crushed pineapple in juice, undrained
1/2 cup glaze for peaches
1/2 tsp grated fresh ginger or 1/4 tsp ground ginger
Procedures : In small bowl, combine undrained pineapple, glaze and ginger. Cover; refrigerate until serving time. Use sauce as a dip for hot egg rolls or chicken nuggets or use to baste chicken or ribs during broiling or grilling. Makes about 1 1/2 cups sauce
